For the Bourgeois family, an aperitif isn’t complete without a platter of warm gougères fresh from the oven and a glass of our well-chilled “Esprit de Bourgeois” Sauvignon Blanc Vin de Loire. This is the recipe we pull out on sunny days to welcome family or friends visiting the estate—simple, generous, and unchanged for years.

This recipe continues our “Family Recipe” series: in each article, a member of the Bourgeois family shares a dish they prepare to pair with one of our wines.

Arnaud's Recipe

Serves 4 · Prep 25 min · Cook 25 min

Ingredients

  • 75 g butter
  • 150 g flour
  • 75 g Chavignol goat cheese (Crottin de Chavignol)
  • 4 eggs
  • 25 cl water
  • 1 pinch of salt

Method

Make the choux pastry

Preheat the oven to 180°C (355°F).

In a saucepan, pour in the water, add the butter cut into pieces and the pinch of salt, then bring to the boil.

Off the heat, add the flour all at once and mix vigorously with a wooden spoon.

Return the saucepan to low heat and stir for 1 to 2 minutes, until the dough pulls away from the sides and forms a ball.

Remove from the heat and let cool for 2 minutes.

Add the eggs one at a time, mixing well between each addition, until you have a smooth, supple dough.

Fold in the Chavignol goat cheese, cut into small dice, and mix.

Shape the gougères

Using two spoons or a piping bag, drop small mounds of dough onto a baking sheet lined with parchment paper, spacing them slightly apart.

Bake for 20 to 25 minutes, until the gougères are well puffed and golden. Serve warm.

The Pairing: "Esprit de Bourgeois"

A fresh and lively Sauvignon Blanc like our “Esprit de Bourgeois” is the classic French aperitif. Its liveliness cleanses the palate between each bite of choux pastry, while its crisp aromas complement the bold character of the melted Crottin de Chavignol inside.

Fermented in stainless steel tanks, this Sauvignon Blanc emphasizes fruit and acidity rather than richness—exactly what’s needed to pair with a warm, indulgent bite without ever weighing it down.

Tasting notes: Serve warm, accompanied by your white wine, chilled (10–12°C).

Arnaud’s Tip

For more flavor and a slightly golden crust, sprinkle a little grated Gruyère cheese over the gougères before baking.

Gougères and Sauvignon Blanc

Can choux pastry be made ahead of time?

The dough is best worked just before baking, but raw shaped gougères can be frozen on a tray and baked straight from frozen, adding a few extra minutes to the cooking time.

What can I use instead of Chavignol goat cheese?

Crottin de Chavignol gives this recipe its distinctive character. Another dry goat cheese can work in a pinch, but the pairing with our "Esprit de Bourgeois" was built around this specific cheese.

How should gougères be stored?

They're best enjoyed warm, straight from the oven. If needed, reheat them in the oven for a few minutes to bring back their crisp texture.
